For then, when it comes time me to prove my usefulness to Steve in the kitchen, I can recall something I watched her make. See this Spinach and Artichoke Mac n Cheese that you really really need. It features a white wine, mozerella and parmesan reggiano cream sauce and tons and tons of spinach, artichoke and whole wheat pasta to make you feel only slightly less bad about eating the whole pan. Also very reminiscient of the dip.
